La cuisine du nord de l&rsquo;Italie a souvent des liens et des similitudes avec celle de la France, et la viande brais\u00e9e au Barolo est le fruit de l&rsquo;exp\u00e9rience des chefs de nos terres expatri\u00e9s en France aux XVIIe et XVIIe si\u00e8cles. Ici, ils ont appris l&rsquo;art de la \u00ab\u00a0nouvelle cuisine\u00a0\u00bb et l&rsquo;ont fait revivre dans les foyers de la bourgeoisie de l&rsquo;\u00e9poque.\n\nLe terme brais\u00e9 vient du dialecte \u00ab\u00a0brasa\u00a0\u00bb (braise) et fait r\u00e9f\u00e9rence \u00e0 la m\u00e9thode de cuisson particuli\u00e8re utilis\u00e9e \u00e0 l&rsquo;origine : la marmite contenant la viande \u00e9tait plac\u00e9e au centre de la braise et laiss\u00e9e cuire longuement dans le vin. La particularit\u00e9 de Barolo r\u00e9side dans son corps. C&rsquo;est un vin \u00e9quilibr\u00e9 et \u00e9l\u00e9gant, persistant et intense en bouche, aux senteurs florales et fruit\u00e9es. Nettoyez le c\u00e9leri, la carotte et l&rsquo;oignon en les coupant en gros morceaux d&rsquo;environ 2-3 cm. Dans un grand bol, d\u00e9poser la viande accompagn\u00e9e des \u00e9pices, des herbes aromatiques et d&rsquo;une gousse d&rsquo;ail. Ajoutez \u00e9galement les l\u00e9gumes et versez le Barolo, jusqu&rsquo;\u00e0 ce que la viande et tous les autres ingr\u00e9dients soient compl\u00e8tement recouverts par le vin. Couvrez le bol de film alimentaire et laissez mariner au r\u00e9frig\u00e9rateur pendant 8 \u00e0 12 heures. Au bout de ce temps, retirez la viande de la marinade et essuyez-la avec du papier absorbant, sans jeter le bol contenant le Barolo et les l\u00e9gumes.<\/p>\n<p>Dans une po\u00eale antiadh\u00e9sive, chauffer l&rsquo;huile avec le beurre et faire dorer la viande \u00e0 feu vif en la scellant bien de tous les c\u00f4t\u00e9s.<br>A ce stade, transf\u00e9rez la viande dans une deuxi\u00e8me po\u00eale adapt\u00e9e \u00e0 la cuisson longue, ajoutez les l\u00e9gumes de la marinade et du jus, jusqu&rsquo;\u00e0 ce qu&rsquo;elle atteigne la moiti\u00e9 de la hauteur de la viande (elle ne doit pas \u00eatre enti\u00e8rement recouverte). Portez \u00e0 \u00e9bullition, puis baissez le feu, fermez la casserole avec son couvercle et poursuivez la cuisson environ 2h30.<br>Retourner la viande toutes les 30-45 minutes et s&rsquo;assurer que les sucs de cuisson n&rsquo;ont pas s\u00e9ch\u00e9 (dans ce cas ajouter un peu de liquide de la marinade r\u00e9serv\u00e9e). Apr\u00e8s la premi\u00e8re heure de cuisson r\u00e9guli\u00e8re du sel.<br>Lorsque la viande est pr\u00eate, retirez-la de la casserole et laissez-la refroidir pendant au moins 30 minutes. R\u00e9server quelques louches de liquide du bouillon (pour ajuster ult\u00e9rieurement, si besoin est, la densit\u00e9 de la sauce d&rsquo;accompagnement), jeter les ar\u00f4mes et la gousse d&rsquo;ail et mixer tout le reste du m\u00e9lange au mixeur plongeant.<br>Pendant ce temps, tranchez la viande et disposez-la sur un plat de service. Servez-le avec la sauce d&rsquo;accompagnement pr\u00e9par\u00e9e.<\/p>\n<p>Votre boeuf brais\u00e9 au Barolo est pr\u00eat.
