Coupez-le en morceaux et avec un couteau bien aiguis\u00e9 et solide hachez-le finement sur une planche \u00e0 d\u00e9couper. Il est important que cette op\u00e9ration soit r\u00e9alis\u00e9e dans un d\u00e9lai aussi proche que possible de celui de la consommation de la viande.\nSi vous \u00eates un expert en d\u00e9coupe de viande, ne vous inqui\u00e9tez pas, la solution id\u00e9ale est d&rsquo;acheter la viande d\u00e9j\u00e0 hach\u00e9e chez le boucher.\n\nProc\u00e9dez en pla\u00e7ant la viande hach\u00e9e dans un bol, ajoutez les gousses d&rsquo;ail \u00e9cras\u00e9es et l&rsquo;huile d&rsquo;olive. Bien m\u00e9langer le m\u00e9lange pour que l&rsquo;huile soit absorb\u00e9e par la viande, qui ne doit cependant pas \u00eatre trop grasse ou trop s\u00e8che. Un conseil?
